I love snacks very much! I just recently said that I wanted to be hungry when we visited a friend because there were going to be snacks. But you know how some snacks are just too sweet? So I like to try new stuff to get snacks I really like and enjoy eating.

I am going to tell you that it hasn’t been as easy as I thought it would be to create my own snacks. What do you normally snack on? I sometimes snack on protein bars or rice cakes or nuts or chips but that’s not really something you can write a whole article about now, is it?

So today I proudly present: my Coconut- Chocolate-Cookies! They are vegan and the recipe is easy and quick. They are also made with oatmeal so you can easily have them gluten-free. They are chewy cookies which I love because other oatmeal cookies are always so hard and therefore difficult to eat.

I measured most of the ingredients in cups, I use whatever symmetrical cup I can find so use whatever you have at home if you don’t have a real measuring cup.
I got 32 cookies out of this recipe and I made one tray with huge cookies and one with small. (my cup can hold 400ml)

Here are the ingredients:

2 Cups Oatmeal
½ tbsp Baking Powder
¾ Cup Desiccated Coconut
1 tsp Cinnamon
3 tsp Chia Seeds
2 tbsp Flee Seed
½ Cup Unsweetened Apple Sauce (or mashed bananas)
3 tbsp Agave Syrup
½ Cup Coconut Oil
½ Cup Plant-based Milk
100g Dark Chocolate (about ½ Cup) (you can also use sugar free)

Let’s get started!

Preheat the oven on 180 degree Celsius.

Put the oatmeal, baking powder, desiccated coconut, cinnamon, chia seeds and flee seeds in bowl and stir. (So basically all the dry ingredients except for the chocolate.

Add the apple sauce and the agave syrup and mix everything. You can also use mashed bananas instead of apple sauce I just don’t like when all you taste is banana so I used apple sauce.

Take the coconut oil and heat it in a pot until it’s melted. You can use this time to cut the chocolate. When the coconut oil is melted mix with the other ingredients.

Add your plant-based milk of choice, I used oat milk. Stir everything.

And finally, add the chocolate.

Form little piles on your baking tray. They don’t really look different after baking so what you form is what you get.
Let bake in the oven for 20 – 25 minutes (depends on the size). They should be a little brown on the edges.
Leave them out to cool before you take them off the tray so they don’t fall apart.
